Rajbhog Awadhi Biryani Recipe
Ingredients:
- 1 kg chicken (bone-in)
- 1 cup yogurt, 2 tbsp ginger-garlic paste
- 1 tbsp red chili powder, ½ tsp turmeric, 1 tbsp biryani masala
- Lemon juice, salt, mint & coriander leaves
- 3 cups basmati rice, whole spices (bay leaf, cloves, cardamom, cinnamon)
- 4 tbsp ghee, fried onions, saffron milk, rose/kewra water
Instructions:
- Marinate chicken with yogurt, spices, herbs & lemon – rest 3 hrs.
- Parboil rice with salt & whole spices till 70% done.
- Cook chicken halfway in ghee with marinade.
- Layer chicken → rice → saffron milk → fried onions → herbs → ghee.
- Dum cook: seal lid, high flame 5 min, low flame 25 min.
- Rest 10 min, gently mix, and serve hot with raita or salan.
