Coconut Rice Recipe

Ingredients:

  • 1 cup jasmine or basmati rice
  • 1 cup coconut milk (unsweetened)
  • 1 cup water
  • ½ tsp salt
  • 1 tsp sugar (optional, enhances flavor)
  • 1 tbsp oil or butter

Instructions:

  • Rinse the rice:
    Wash the rice under cold water until the water runs clear. This removes excess starch and keeps the rice fluffy.

 

  • Combine ingredients:
    In a medium saucepan, add the rice, coconut milk, water, salt, sugar (if using), and oil/butter.

 

  • Cook:
    Bring to a gentle boil over medium heat. Once boiling, stir once, reduce the heat to low, cover with a lid, and simmer for about 15 minutes, or until the liquid is absorbed.

 

  • Rest:
    Turn off the heat and let it sit, covered, for another 10 minutes to finish steaming.

 

  • Fluff and serve:
    Fluff the rice gently with a fork. Garnish with toasted shredded coconut if desired.
